Savory Walnut Whipped Cream

DESCRIPTION                                                                      

A light and airy walnut based whipped cream. Serve as is or try one of the variations listed below. Serve over soups, stews or casseroles.

 

INGREDIENTS

2 cup California walnuts

1 cup water

Pinch salt

 

DIRECTIONS

1.    Puree walnuts and water in a blender for 2 minutes or until very light and fluffy.

2.    Store tightly covered in the refrigerator until refrigerator until ready to serve.

 

Variations:

 

Chipotle

Puree with 2 teaspoons minced chipotle peppers, 2 teaspoons adobo sauce from can, 1/2 teaspoon onion powder and 1/2 teaspoon salt. Add 2 tablespoons fresh cilantro leaves and pulse to chop (optional).

 

Onion Chive:

Puree with, 1/2 teaspoon onion powder and 1/2 teaspoon salt. Add 3 tablespoons snipped fresh chives and pulse to chop chives.
