Irish Whiskey Oat Crackeres
These are so close to the delicious oat crackers found in grocery stores in Ireland and Scotland. Now you can make these bit size baby’s at home!
Prep time: 30 minutes
Cook time: 20 minutes
1 1/3 cups rolled oats
1 cup flour
6 tablespoons cold, diced butter (preferably Irish butter)
1 1/2 teaspoons garlic salt
1/2 teaspoon coarse ground pepper
1/2 cup Irish whiskey
Place all ingredients except whiskey in a food processor. Pulse to mix, then add whiskey. Process until mixture forms a stiff dough, adding a bit of water if dough is too dry. Cover with plastic wrap and refrigerate for at least 1 hour. (May be prepared several days ahead.)
Preheat oven to 400°F and line 2 baking sheets with parchment paper. Roll dough fairly thinly on a lightly floured board. Cut with desired cutters or a small sharp knife and place on prepared baking sheets. Bake for 20 minutes or until lightly browned.
Recipe tip:
Rolling the dough very thin will result in a crispy cracker. While I usually prefer this, I love a slightly thicker cracker in this recipe that is a bit more tender than crunchy.
