Whiskey Cheese Spread

This delicious cheese spread starts with cream cheese and a rich Irish cheese. A bit of Irish whiskey give it a nice kick! Serve at room temperature for a fluffier spread. It’s perfect on rustic wheat crackers or bread.

 

Prep: 10 minutes 

 

1 large clove garlic

1 (8-oz.) block cream cheese, at room temperature

1/4 cup Irish whiskey

2 teaspoons spicy brown mustard

5 to 6-oz. Irish cheese, cubed and at room temperature

3 tablespoons sliced green onion tops

Freshly ground pepper to taste

 

Drop garlic into a food processor with the motor running to chop. Add cream cheese and process until light and fluffy. Add, whiskey, mustard and cheese; puree until very smooth, scraping down the sides as needed. Add green onion and pulse to chop.  Season with pepper and place in a container with a tight fitting lid. Store in the refrigerator until ready to serve. May be prepared up to 1 week ahead.

 

Recipe tip:

For an extra hit of color and flavor, add a bunch of snipped fresh chives.
