Smokey Walnut Cheese Crackers
This is as great entertaining or snacking recipe.
Prep time: 30 minutes
Chill time: at least 1 hour
Cook time: 10 to 12 minutes
6 oz. smoked Cheddar or naturally smoked Gouda cheese, cubed
(or 1 1/2 cups heaping shredded cheese)
6 tablespoons cold butter, cubed
1/3 cup California walnuts
1 cup flour
3/4 teaspoon smoked or coarse ground pepper
Place all ingredients in the bowl of a food processor and process until ingredients all start to come together. Transfer to a lightly floured board and knead until a dough comes together. Divide into 2 pieces and shape each into an oval log, about 1-inche in diameter, pressing firmly to make sure there are no air gaps. Wrap tightly and refrigerate for at least 1 hour or until firm. (May be made up to 1 week ahead.) Preheat oven to 400°F and line 2 large baking sheets with parchment paper. Cut dough into 1/4-inch thick slices and place on prepared baking sheets. Bake for 10 to 12 minutes or until lightly browned. Let cool completely then store in an airtight container.
*This is a great way to use up bits and pieces of cheese. Use what you have!
Recipe tip:
For holiday shapes, roll dough thinly on a floured board and cut with small desired cookie cutters.
