Egg White Bites
Heads up! You’ll need a sous vide to make these amazing delicate egg bites.
Prep time: 20 minutes Cook time: 50 minutes
1/3 cup cottage cheese
1/3 cup shredded extra sharp Cheddar cheese
1 tablespoon shredded Parmesan cheese
1/2 teaspoon Italian herb seasoning blend
1/4 teaspoon smoked or sea salt
6 egg whites
2 tablespoons minced red bell or roasted red peppers
2 tablespoons thinly sliced green onions
2 tablespoons cooked crumbled bacon or real bacon pieces
Freshly ground pepper to taste
Coat 4 small canning jars with nonstick cooking spray and heat water in a deep pot to 172°F using a sous vide. Puree cottage cheese, Cheddar, Parmesan, seasonings and egg whites in a blender. Place equal amounts of bacon, green onion and peppers into jars. Place in preheated water and bring back up to temperature. (Make sure water covers to 1/2-inch above the jar lids.)
Cook for 50 minutes. Let stand for 5 minutes before running a sharp knife around the edges of each and inverting to remove from jars, or simply eat out of the jar. May be prepared several days ahead and stored covered in the refrigerator. Recipe may be doubled. Makes 4 servings.
