Blueberry Balsamic Glazed Salmon
Just a few simple ingredients transform California King Salmon into an impressive dish.

Prep time: 5 minutes Cook time: about 20 minutes total
1 pint container (2 cups) fresh blueberries 1/3 cup blueberry jam 3 tablespoons balsamic vinegar 4 California King Salmon filets (about 6 oz. each) Olive or vegetable oil Salt and pepper to taste Snipped fresh basil
Stir together blueberries, jam and vinegar in a small saucepan. Bring to a boil; reduce heat and cook over very low heat for 10 minutes, stirring occasionally; set aside. (May be prepared several days ahead and stored in a covered container in the refrigerator.)
Preheat a grill to medium-high. Coat the top of the salmon with a light layer of oil and season with salt and pepper. Oil the grill grates and cook salmon for 3 to 6 minutes per side or until it flakes easily with a fork. Serve with blueberry glaze and sprinkle with basil, if you like.
Make ahead tip: The sauce may be prepared several days ahead and stored in a covered container in the refrigerator.
Recipe tip: Serve any leftover glaze over a wedge of brie with toasty baguette slices or grilled chicken or pork.
