Honey Jalapeno Salmon

Sweet, spicy and tangy! This recipe is oh so easy and is the perfect pairing for rich, buttery California King Salmon.

Prep time: 10 minutes 

Cook time: 10 minutes

 

1/3 cup honey

1/3 cup lemon or lime juice

3 tablespoons butter

2 medium jalapeno peppers, stemmed and sliced

4 California King Salmon fillets (about 6 oz. each)

Olive oil

Freshly ground sea salt and pepper to taste

Lemon or lime wedges and fresh cilantro sprigs

 

 

Place honey, lemon or lime juice, butter and jalapeno in a small saucepan. Bring to a simmer, then remove from heat. (May be prepared several days ahead and stored in the refrigerator in a covered container. If making ahead, remove jalapeno slices as they will lose their bright color. Add fresh, thinly sliced jalapeno slices just before serving.)

 

Brush salmon with oil and season with salt and pepper.

 

Preheat a grill to medium-high. Oil the grill grates and cook salmon for 3 to 6 minutes per side or until it flakes easily with a fork. Remove from grill and place on individual plates or a platter. Serve with honey jalapeno mixture and garnish with lemon or lime wedges and cilantro.
