Guinness Beef and Potato Pizza

 All the great flavors of Guinness Beef Stew in a pizza!

 

Prep time: 20  minutes

Cook time: 2 hours

 

3/4 cup Guinness beer

1/2 cup prepared beef gravy

1 1/2 tablespoons Worcestershire sauce

1 pound beef round, cubed

Garlic salt and pepper to taste

8 baby yellow potatoes, quartered

2 premade pizza crusts or naan bread

6 oz. torn fresh mozzarella

2/3 cup shredded Irish cheese

Thinly sliced and quartered red onion

Coarsely chopped parsley and grated Parmesan cheese (optional toppers)

 

Place beer, gravy, Worcestershire sauce and beef in a small saucepan. Bring to a boil, then reduce heat. Cover and simmer over very low heat for 1 1/2 hours or until beef is very tender. Remove cover and cook until excess has cooked off. Let cool and refrigerate until ready to use. To prepare pizza, preheat oven to 450°F and line 2 baking sheets with parchment paper. Toss potatoes in a bit of olive oil. Air fry or roast until browned and tender. Top pizza crusts with cheeses, then coarsely shred some of the beef over the top, using a little or a lot. Scatter the potatoes and onion over the  pizza. Bake for 10 to 12 minutes or until cheese is lightly browned around the edges. Sprinkle with parsley and Parmesan, as you like.
