Fig and Lemon Marsala Carrots

Marsala carrots are a long time family favorite recipe. Dalmatia Fig Spread adds another level of earthy goodness to this recipe.

 

2 pounds carrots

3 tablespoons butter

1/4 cup Marsala wine

1/4 cup lemon juice

3 tablespoons Dalmatia Fig Spread

Salt and pepper to taste

Chopped freshly parsley or carrots tops (optional)

 

Peel carrots and cut into 1/4 -inch thick slices on the diagonal. Melt butter in a very large skillet. Add carrots and cook over medium-high heat for 5 minutes or until lightly browned, stirring frequently. Add marsala, lemon juice and fig spread; cook and stir for 5 minutes more or until the liquid has turned into a glaze. Season with salt and pepper and parsley or carrot tops. Makes 8 servings.
