Fig Glazed Carrots

Prep time:  10 minutes

Cook time: about 20 minutes

 

3 tablespoons butter

2 lbs. carrots, peeled and cut into large julienne strips

3/4 cup orange juice

1/4 cup Dalmatia Fig Orange Spread*

Salt and pepper to taste

Chopped fresh parsley and grated orange zest (optional garnishes)

 

Melt butter in a very large skillet. Stir in carrots and cook over medium heat for 5 minutes or until carrots are lightly browned, stirring occasionally. Reduce heat and stir in juice and fig spread. Cook over medium low heat for 5 minutes or until carrots are tender and until excess liquid has cooked off and carrots are nicely glazed. Season with salt and pepper. Makes 6 to 8 servings.

 

*Feel free to swap out any variety of Dalmatia spread in this recipe.
